Food colouring, or colour additive, is any dye, pigment or substance that imparts colour when it is added to food or drink. They come in many forms consisting of liquids, powders, gels, and pastes. Food colouring is used both in commercial food production and in domestic cooking. Food colourants are also used in a variety of non-food applications including cosmetics, pharmaceuticals, home craft projects, and medical devices. While naturally derived colours are not required to be certified by a number of regulatory bodies throughout the world (including the US FDA), they still need to be approved for use in each country. Food colourings are tested for safety by various bodies around the world and sometimes different bodies have different views on food colour safety.

The lead analyst of the report commented “As a result of rising health awareness, consumers are moving towards natural food products. Consumers are ready to pay premium price for natural foods. It has been observed that three-fourth of the population thoroughly checks labels before buying products. This changing era has driven manufacturer to replace artificial colours with natural colours. Companies are now adopting new technologies to produce newer varieties of natural colours which are more stable and suitable.”
